How to make it

  • In a large heavy saucepan on med heat, saute onion, garlic, carrots and squash in butter/margarine for about 5 mins.
  • Stir in curry and cumin and cook for an additional minute.
  • Add boiling water, OXO; bring to boil.
  • Reduce heat and simmer for 25 mins or until vegs are tender.
  • Puree in blender or food processor until smooth.
  • Stir in chopped cilantro and hot sauce.
  • Season to tase with salt and pepper
  • 111 calories; fat 4.7g.; protein 1.8g;carbohydrate 17.2g; fibre 3.3g

    Absolutely, the skin would provide much more fibre than my tummy can handle... ;o)
