Ingredients
  • 1 lb. eggplant
  • 1 lb. zucchini
  • 1 lb. potatoes
  • 1 lb. ground beef
  • 1 large onion, chopped
  • salt, pepper and allspice
  • chopped parsley
  • 1 small can tomato paste
  • 2 c. white sauce

Directions
  1. Cut eggplant into rings and boil for short time until
  2. soft. Cut zucchini into rings and fry. Cut and fry potatoes.
  3. Fry onions. When onions are slightly brown, add parsley,
  4. spices and meat. Fry until meat is brown. Add tomato paste
  5. and 1 cup water and cook until meat is done. Make 2 cups of
  6. white sauce. Layer ingredients in casserole or baking dish in
  7. following order: potatoes, eggplant, meat mixture, zucchini and
  8. white sauce on the top. Bake at 350 degrees until top is bubbly and
  9. browned slightly on top. Bake in 9 x 13-inch pan.

This sounds fantastic - how do you make the white sauce that goes with it?


I am drooling over this. I love the fact that you add the white sauce! Sounds wonderful!


White sauce is simply Milk, butter and flour.
The ratio is:
1 cup milk
2 Tablespoons butter and flour.

Melt butter in a small pan and stir in flour until frothy. Gradually add milk, stirring constantly. Stir for a further couple of min over a med heat until it thickens.
