How to make it

  • Preheat oven to 425F
  • Coarse crumble crackers and then pour the butter over and mix till very well combined
  • Squeeze juice from a fresh lemon over fish and then season fish
  • Using enough mayo, spread evenly over fish
  • Press cracker mixture over fillets.
  • Lay some slices of gogonzolla across the top of each fillet
  • Sprinkle with paprika
  • Bake fish until topping is golden and fish is cooked and done
  • Carefully split the 2 portions into 4 pieces.
  • I find this easier to prepare instead of 4 smaller pieces
  • Serve at once

    I just tried haddock for the first time the other day when I went to new england. For some stupid reason, haddock is virtually impossible to get here. I'd never even heard of it before, but gawd, is it delicious. Now when I make a special order for it soon, I'll know what to do with it! Thanks so much for this awesome recipe.

    MMMMMMMMMM....I have to try this. I wouldn't think of pairing the gorgonzola with the haddock, but it sounds great!
