Ingredients
  • 1 1/2 lbs fresh or thawed haddock, cut into 2 fillets
  • 1 cup New England style oyster crackers
  • 1/2 stick butter melted
  • ocean fish seasoning or salt and pepper
  • fresh lemon
  • mayonnaise , about T tbs
  • gongonzolla blue cheese
  • paprika

Directions
  1. Preheat oven to 425F
  2. Coarse crumble crackers and then pour the butter over and mix till very well combined
  3. Squeeze juice from a fresh lemon over fish and then season fish
  4. Using enough mayo, spread evenly over fish
  5. Press cracker mixture over fillets.
  6. Lay some slices of gogonzolla across the top of each fillet
  7. Sprinkle with paprika
  8. Bake fish until topping is golden and fish is cooked and done
  9. Carefully split the 2 portions into 4 pieces.
  10. I find this easier to prepare instead of 4 smaller pieces
  11. Serve at once

MMMMMMMMMM....I have to try this. I wouldn't think of pairing the gorgonzola with the haddock, but it sounds great!
