Five-bean Vegetarian Chili Recipe

Ingredients

2 tablespoons olive oil

1 sweet onion, chopped

1 green bell pepper, chopped

3 cloves garlic, minced

2 chipotle peppers, drained and finely chopped

2 sun-dried tomatoes, drained and finely chopped

28 ounces crushed tomatoes

16 ounces black beans

16 ounces garbanzo beans

16 ounces butter beans

16 ounces dark red kidney beans

16 ounces light red kidney beans

14 ounces vegetable broth

2 cups water

1 tablespoon chili powder

2 teaspoons ground cumin

1 teaspoon dried oregano

1/2 teaspoon kosher salt

1/2 teaspoon dried thyme leaves

fresh ground black pepper, season to taste

Directions

Heat oil in Dutch oven over medium-high heat.

Add onion and bell pepper.

Cook until vegetables soften, about 3 minutes, stirring

often.

Add garlic and cook for 1 minute.

Stir in chipotle and sun-dried tomatoes.

Add crushed tomatoes, beans,vegetable broth, water, chili powder, cumin, oregano, salt, thyme, and black pepper to taste.

Heat to a boil over medium-high heat.

Lower heat to simmer.

Cover and cook, stirring occasionally, for 20

minutes.

Well, I'm entered into a chili contest next weekend 7/25/09. I've NEVER made chili before in my entire life (I'm 40). I don't even really like chili and I'm a vegetarian. So, I'm going to try this recipe...cause it sounds pretty good. I'll let you know how I do!
