Ingredients
  • 2 tablespoons olive oil
  • 1 sweet onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 chipotle peppers, drained and finely chopped
  • 2 sun-dried tomatoes, drained and finely chopped
  • 28 ounces crushed tomatoes
  • 16 ounces black beans
  • 16 ounces garbanzo beans
  • 16 ounces butter beans
  • 16 ounces dark red kidney beans
  • 16 ounces light red kidney beans
  • 14 ounces vegetable broth
  • 2 cups water
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried thyme leaves
  • fresh ground black pepper, season to taste

Directions
  1. Heat oil in Dutch oven over medium-high heat.
  2. Add onion and bell pepper.
  3. Cook until vegetables soften, about 3 minutes, stirring
  4. often.
  5. Add garlic and cook for 1 minute.
  6. Stir in chipotle and sun-dried tomatoes.
  7. Add crushed tomatoes, beans,vegetable broth, water, chili powder, cumin, oregano, salt, thyme, and black pepper to taste.
  8. Heat to a boil over medium-high heat.
  9. Lower heat to simmer.
  10. Cover and cook, stirring occasionally, for 20
  11. minutes.

Well, I'm entered into a chili contest next weekend 7/25/09. I've NEVER made chili before in my entire life (I'm 40). I don't even really like chili and I'm a vegetarian. So, I'm going to try this recipe...cause it sounds pretty good. I'll let you know how I do!
