How to make it

  • Heat oil in Dutch oven over medium-high heat.
  • Add onion and bell pepper.
  • Cook until vegetables soften, about 3 minutes, stirring
  • often.
  • Add garlic and cook for 1 minute.
  • Stir in chipotle and sun-dried tomatoes.
  • Add crushed tomatoes, beans,vegetable broth, water, chili powder, cumin, oregano, salt, thyme, and black pepper to taste.
  • Heat to a boil over medium-high heat.
  • Lower heat to simmer.
  • Cover and cook, stirring occasionally, for 20
  • minutes.

    Well, I'm entered into a chili contest next weekend 7/25/09. I've NEVER made chili before in my entire life (I'm 40). I don't even really like chili and I'm a vegetarian. So, I'm going to try this recipe...cause it sounds pretty good. I'll let you know how I do!
