Five-Bean Vegetarian Chili

- 2 tablespoons olive oil shopping list
- 1 sweet onion, chopped shopping list
- 1 green bell pepper, chopped shopping list
- 3 cloves garlic, minced shopping list
- 2 chipotle peppers, drained and finely chopped shopping list
- 2 sun-dried tomatoes, drained and finely chopped shopping list
- 28 ounces crushed tomatoes shopping list
- 16 ounces black beans shopping list
- 16 ounces garbanzo beans shopping list
- 16 ounces butter beans shopping list
- 16 ounces dark red kidney beans shopping list
- 16 ounces light red kidney beans shopping list
- 14 ounces vegetable broth shopping list
- 2 cups water shopping list
- 1 tablespoon chili powder shopping list
- 2 teaspoons ground cumin shopping list
- 1 teaspoon dried oregano shopping list
- 1/2 teaspoon kosher salt shopping list
- 1/2 teaspoon dried thyme leaves shopping list
- fresh ground black pepper, season to taste shopping list
How to make it
- Heat oil in Dutch oven over medium-high heat.
- Add onion and bell pepper.
- Cook until vegetables soften, about 3 minutes, stirring
- often.
- Add garlic and cook for 1 minute.
- Stir in chipotle and sun-dried tomatoes.
- Add crushed tomatoes, beans,vegetable broth, water, chili powder, cumin, oregano, salt, thyme, and black pepper to taste.
- Heat to a boil over medium-high heat.
- Lower heat to simmer.
- Cover and cook, stirring occasionally, for 20
- minutes.
