My Any Meat Any Pasta Casserole

- 1 medium onion, chopped shopping list
- 2 cups (500 ml) of pasta of your choice, not pre-cooked (tortellinis, fusillis, macaroni, shells, penne) (I use multi-coloured tortellinis) shopping list
- 1 cup (250 ml) broccoli florets shopping list
- 2 carrots, finely sliced shopping list
- 3/4 lb beef (cubed or ground) OR chicken, boneless, skinless, cubed OR pork (boneless, cubed OR veal, cubed OR sausages or any meat you have on hand shopping list
- 1 - 10 oz can (284 ml) cream of celery or mushroom or chicken or brocoli soup shopping list
- 3/4 cup (175 ml) milk shopping list
- 1/2 tsp (2 ml) dry mustard shopping list
- 1/2 cup (125) cheddar cheese (your preference) shopping list
- salt and pepper shopping list
- mushrooms, sliced (Optional) shopping list
How to make it
- In a large pot of water, cook the pasta according to package directions. 5 minutes before the pasta is fully cooked, add the broccoli and the carrots to slightly cook them. Drain the water, keep covered and reserve.
- In a large saucepan, brown the meat (beef, chicken, pork or veal or else) and the onion and cook until done and the onion is transparent. Remove excess fat.
- Add the cream soup of your choice, the milk and dry mustard.
- Bring to a boil. Reduce heat to simmer and add the cooked pasta, vegetables and cheese. Season with salt and pepper to taste. Mix well, cover with a lid and simmer for another 3 minutes until the cheese is melted.
