Black eyed bean fritters

- 1 ¼ cups dried black eyes beans (peas) shopping list
- 1 onion chopped shopping list
- 1 red chili pepper seeds optional shopping list
- about 2/3 cup water shopping list
- salt and fresh ground black pepper shopping list
- vegetable oil for frying shopping list
How to make it
- Soak beans overnight in plenty of cold water
- drain and briskly rub beans between palms, to remove skins
- return beans to bowl and top up with fresh water, skins will float to top
- discard skins and soak for a further 2 hrs
- puree beans, onion and chili adding a little water to make a thick paste
- season
- whisk for a few minutes
- heat oil
- drop spoonfuls of mix into hot oil and fry for 4 min. or until golden brown
