Ingredients
  • 1 ΒΌ cups dried black eyes beans (peas)
  • 1 onion chopped
  • 1 red chili pepper seeds optional
  • about 2/3 cup water
  • salt and fresh ground black pepper
  • vegetable oil for frying

Directions
  1. Soak beans overnight in plenty of cold water
  2. drain and briskly rub beans between palms, to remove skins
  3. return beans to bowl and top up with fresh water, skins will float to top
  4. discard skins and soak for a further 2 hrs
  5. puree beans, onion and chili adding a little water to make a thick paste
  6. season
  7. whisk for a few minutes
  8. heat oil
  9. drop spoonfuls of mix into hot oil and fry for 4 min. or until golden brown
