How to make it

  • Soak beans overnight in plenty of cold water
  • drain and briskly rub beans between palms, to remove skins
  • return beans to bowl and top up with fresh water, skins will float to top
  • discard skins and soak for a further 2 hrs
  • puree beans, onion and chili adding a little water to make a thick paste
  • season
  • whisk for a few minutes
  • heat oil
  • drop spoonfuls of mix into hot oil and fry for 4 min. or until golden brown
