Tex Mex Mini Meatloaves

- 1 lb. fresh chorizo sausage, casings removed shopping list
- 1 lb. ground pork shopping list
- 1 (15 oz) can black beans, rinsed and drained shopping list
- 1 (15 oz) can whole kernel corn, rinsed and drained shopping list
- 1 cup finely crushed nacho cheese flavored tortilla chips shopping list
- 1 cup frozen diced onion, red and green bell pepper, and celery shopping list
- 2 large eggs, lightly beaten shopping list
- 2 Tbsp. chopped fresh cilantro shopping list
- 1 tsp. fajita seasoning shopping list
- 1 cup (4 oz) shredded Mexican four cheese blend shopping list
- Toppings: guacamole, sour cream, salsa shopping list
How to make it
- Preheat oven to 375*. Gently combine first 9 ingredients in a medium bowl. Press mixture into 16 lightly greased muffin pan cups. Place on an aluminum foil lined baking sheet.
- Bake at 375* for 45 minutes. Sprinkle with cheese. Bake 2 more minutes or until cheese is melted and bubbly. Serve with desired toppings.

Not only do these sound really good, I bet they'd be beautiful, too, all studded with veggies and beans. I like that they're portion-controlled, too....well, if you can limit how many you have!
