Chocolate Chip Cookie Icecream Sandwiches

- 6 Tblspn unsalted butter - softened shopping list
- 6 Tblspn sugar shopping list
- 6 Tblspn brown sugar shopping list
- 1 large egg - beaten shopping list
- 1/2 tsp vanilla shopping list
- 1 cup self-rising flour shopping list
- 1/4 cup unsweetened cocoa powder shopping list
- 1/4 tsp salt shopping list
- 2/3 cup chocolate chips - semi-sweet, milk or white shopping list
- Icecream for filling - you choose the flavor shopping list
How to make it
- Pre-heat oven to 350 degrees
- Grease several baking sheets
- Cream the butter & sugars together until light & fluffy
- Beat in the egg & vanilla
- Sift the flour, cocoa & slat together & fold into the sugar/butter mixture
- Fold in the chocolate chips
- Put about 4 heaping Tblspn of the mixture, spaced well apart on each baking sheet.
- Press them down & spread them out using the back of a wet spoon
- Bake for 12 - 15 mins
- Cool on baking sheets 2 mins & then move to wire racks to cool completely
- When cold use immediately or store in an airtight container until ready to use for up to 5 days
- to assemble the sandwiches, spread a layer of icecream about 1 inch thick on a cookie, then press a 2nd one on top
- Repeat to make 6 sandwiches
- Freeze until ready to serve
