How to make it

  • Pre-heat oven to 350 degrees
  • Grease several baking sheets
  • Cream the butter & sugars together until light & fluffy
  • Beat in the egg & vanilla
  • Sift the flour, cocoa & slat together & fold into the sugar/butter mixture
  • Fold in the chocolate chips
  • Put about 4 heaping Tblspn of the mixture, spaced well apart on each baking sheet.
  • Press them down & spread them out using the back of a wet spoon
  • Bake for 12 - 15 mins
  • Cool on baking sheets 2 mins & then move to wire racks to cool completely
  • When cold use immediately or store in an airtight container until ready to use for up to 5 days
  • to assemble the sandwiches, spread a layer of icecream about 1 inch thick on a cookie, then press a 2nd one on top
  • Repeat to make 6 sandwiches
  • Freeze until ready to serve
