Roasted lemons

How to make it
- Cut lemons in half and pick out any obvious seeds.
- Roast in the oven at 375-400F ,alongside whatever you are cooking. For example, you could put them right in the roasting pan with the chicken.
- You can also grill them- just pop them on a medium-hot grill in the last 5 minutes of cooking.
- Make sure when you are cooking them that the cut side is up, and they are done when the fruit is swollen and juicy and the peel is a little charred.
- These are really wonderful, the roasting mellows the acidity of the lemon and brings out its sweetness. I think you'll become as addicted to them as I have!
