Ingredients

2c whole wheat flour

1/2c whole rye flour

1/2c coarse cornmeal

1tsp instant yeast

11/2tsp salt

oil as needed

Directions

Combine flours,cornmeal,yeast and salt in large bowl.. Add 11/2c water and stir till blended;dough will be shaggy. Cover bowl with plastic wrap. Let dough rest about 4 hours at warm room temperature,about 70 degrees.

oil a standard loaf pan(8or9"x4";non-stick works well.)Lightly oil your hands and shape dough into a rough rectangle. Put it in pan,pressing out to the edges. Brush top with a little more oil. Cover with plastic wrap and let rise 1 hour more.

Preheat oven to 350. Bake bread about 45 mins or till loaf reaches internal temp. of 210 degrees. Remove from pan and cool on rack.

Do you know if this will work without the rye flour? I don't have that on hand but have plenty of freshly ground whole wheat to use (and probably have cornmeal or can grind some of that too).
