Crispy Parmesan Wedges with Creamy Dipping Sauce

- 300g sweet potatoes cut into wedges (i don't peel- just scrub) shopping list
- 300g sebago potatoes cut into wedges (scrubbed but not peeled) shopping list
- 1 tbsp olive oil shopping list
- sea salt, cracked black pepper, chili flakes shopping list
- 2 tsp thyme leaves shopping list
- 1/3 cup parmesan, finely grated shopping list
- Sauce: shopping list
- 1/4 cup sour cream or natural yoghurt shopping list
- 1/4 cup whole egg mayonnaise shopping list
- 1 clove gralic- peeled and crushed shopping list
- 2 tsp lemon juice shopping list
How to make it
- Preheat oven to 200degC
- Sauce: combine sauce ingreadients and set aside
- Place wedges on baking tray and sprinkle with oil. Toss to coat and roast 30mins.
- Sprinkle seasoning and parmesan ovet the potator wedges and roast a further 10 mins or until the parmesan is crispy and golden brown.
