Crispy Parmesan Wedges With A Creamy Dipping Sauce

    We really enjoyed these! About half of my potatoes got a little crunchy and the rest didn't. None of the sweet potatoes did. I think if you were to stick the pan under the broiler at the end for a minute or 2, that would help? I used a chipotle mayo in the dipping sauce and it was delicious!! 200C = 392F so I put my oven at 400. Really yummy and a nice change to eating potatoes :)

    Sebago potatoes are a general all-around potato, grown in Australia. Russets can be subbed for them.

    I used light sour cream FA, but would have used the yogurt if I had it. Thanks!

    Good dipping sauce. There is plenty of dipping sauce.
    Sweet potatoes must be out of season for my local stores.
    Used Yukon Gold baby potatoes and doubled the recipe.
    The Parmesan coating is what gets crispy.
    I'm assuming the chili flakes mean red pepper flakes.
    There is plenty of Parmesan to go around too.
    I have enough potatoes to make this again.
