Ingredients
  • 1 pkg. Duncan Hines Lemon Supreme cake mix
  • 4 eggs
  • 2 lbs. ricotta cheese
  • 1 tsp. lemon juice
  • 1 tsp. pure vanilla
  • 3/4 cup sugar

Directions
  1. Preheat oven to 325°.
  2. Prepare cake mix as instructed on package and pour into a 9" x 11" greased pan.
  3. In a medium bowl, mix together eggs, ricotta cheese, lemon juice, vanilla and sugar.
  4. Gently pour over cake mix.
  5. Bake for 1 1/2 hours.
  6. Refrigerate when cool. Sprinkle with confectioners sugar before serving.
