Ingredients

COOKIE:

1 1/4 cups flour

3/4 cup butter, softened

1/2 cup cornstarch

1/3 cup powdered sugar

1 T. fresh lemon juice

1 tsp. grated lemon peel

FROSTING:

3/4 cup powdered sugar

1/4 cup butter, softened

1 tsp. grated lemon peel

1 T. fresh lemon juice

Directions

In large mixer bowl combine all cookie ingredients.

Beat at low speed, scraping bowl often, until well mixed (2-3 mins).

Divide dough in half. Shape each half into an 8x1 inch roll.

Wrap in plastic wrap. Refrigerate until firm(1-2 hours).

Heat oven to 350.

With a sharp knife, cut each roll into 1/4 inch slices.

Place 2 inches apart on cookie sheets.

Bake for 8-12 minutes or until set. (COOKIES WILL NOT BROWN.)

Cool completely.

In small mixer bowl combine all frosting ingredients.

Beat at med. speed, scraping bowl often, until fluffy ( 1-2 mins.)

Frost COOLED cookies.

I ended up making these and they are terrific. I love the frosting and had to make up more b/c I ate a bunch out of the bowl on a spatula! LOL Thanks!
