Eggless Lemon Meltaway Cookies

- COOKIE: shopping list
- 1 1/4 cups flour shopping list
- 3/4 cup butter, softened shopping list
- 1/2 cup cornstarch shopping list
- 1/3 cup powdered sugar shopping list
- 1 T. fresh lemon juice shopping list
- 1 tsp. grated lemon peel shopping list
- FROSTING: shopping list
- 3/4 cup powdered sugar shopping list
- 1/4 cup butter, softened shopping list
- 1 tsp. grated lemon peel shopping list
- 1 T. fresh lemon juice shopping list
How to make it
- In large mixer bowl combine all cookie ingredients.
- Beat at low speed, scraping bowl often, until well mixed (2-3 mins).
- Divide dough in half. Shape each half into an 8x1 inch roll.
- Wrap in plastic wrap. Refrigerate until firm(1-2 hours).
- Heat oven to 350.
- With a sharp knife, cut each roll into 1/4 inch slices.
- Place 2 inches apart on cookie sheets.
- Bake for 8-12 minutes or until set. (COOKIES WILL NOT BROWN.)
- Cool completely.
- In small mixer bowl combine all frosting ingredients.
- Beat at med. speed, scraping bowl often, until fluffy ( 1-2 mins.)
- Frost COOLED cookies.

I ended up making these and they are terrific. I love the frosting and had to make up more b/c I ate a bunch out of the bowl on a spatula! LOL Thanks!
