Raspberry English Trifle Recipe
This is one of the most elegant desserts if made and assembled properly and without any shortcuts.

  • 1 (12 oz) pound cake
  • 4 Tbsp + raspberry seedless jam
  • 1 cup sliced almonds
  • 1 cup medium dry sherry
  • 1/4 cup brandy
  • 2 cups heavy cream
  • 2 Tbsp superfine sugar
  • 3 pints fresh raspberries or 1 pint fresh for garnish and 1 (16 oz) bag frozen whole berries for inside
  • Custard Sauce:
  • 3 cups whole milk
  • 4 tsp. cornstarch
  • 2 Tbsp. sugar
  • 3 egg yolks
  • 1 tsp. vanilla

Directions
  1. In a heavy saucepan combine 1/2 cup milk and the cornstarch over medium heat.
  2. Stir with whisk until the cornstarch is dissolved
  3. Add remaining 2 1/2 milk and sugar
  4. cook over moderate heat, stirring until sauce thickens and comes to a boil
  5. In a bowl mix egg yolks with fork and stir in 4 or 5 tbsps of sauce to temper
  6. then whisk the egg yolk mixyure back into the remaining sauce
  7. Bring to a boil again and boil one minute, stirring constantly
  8. Remove pan from heat and add the vanilla
  9. Set aside; may need to fridge to chill down
  10. Slice pound cake into 1 inch thick slices
  11. Spread jam on one side, then cube slices
  12. Place jam side facing out of bowl or up from bottom
  13. Use trifle bowl or similar large glass bowl, 8 or 9 inches across and at least 4 inches deep
  14. Pour sherry and brandy over cake
  15. Let steep for 30 minutes at room temperature
  16. Then whip the cream
  17. Set aside about a dozen of the best berries for garnish
  18. Place remaining berries over cake and 1/2 of almonds
  19. With spatula gently spread custard over berries
  20. Let settle for a few minutes
  21. Then spread whipped cream over the custard
  22. Make sure custard and the cream are spread to the edges of the bowl.
  23. Garnish with set aside berries and other 1/2 of almonds
  24. If you are very talented you could put 1/2 of whipped cream in a pastry bag and decorate top before berries and almonds
