This easy Italian cheesecake combines lemon with sweet Italian ricotta cheese

Ingredients
  • 3 lbs. ricotta cheese
  • 5 eggs, beaten
  • 1 1/2 cups sugar
  • 1 oz. grated lemon and orange peels, finely grated
  • 1 tsp. vanilla

Directions
  1. Blend all of these ingredients.
  2. Pour into a greased 10-inch pie plate.
  3. Bake in a 350F degree oven for 1 1/2 hours
