How to make it

  • Spray a nonstick cookie sheet pan liberally with vegetable cooking spray.
  • Blend mayonnaise, water lemon juice, and garlic ina shallow plate. Combine Parmesan cheese and bread crumbs on wax paper. Preheat oven to 450 degrees.
  • Cut the eggplant lengthwise into 1/2 inch thick slices. dip each slice into the mayonnaise mixture turning to coat both sides then press both sides lightly into crumb mixture. Arrange each crumb coated slice in a single layer on the cookie sheet.
  • Bake in a preheated 450 degrees for 5 minutes or more until coating is crisp and eggplant is tender.
