Oven Fried Eggplant

- 3 Tbs mayonnaise shopping list
- 1 Tbs water shopping list
- 2 Tbs lemon juice shopping list
- Pinch garlic powder shopping list
- 1/3 cup grated parmesan cheese shopping list
- 1/3 cup bread crumbs shopping list
- 1 medium eggplant ( 1 1/4 pounds) shopping list
How to make it
- Spray a nonstick cookie sheet pan liberally with vegetable cooking spray.
- Blend mayonnaise, water lemon juice, and garlic ina shallow plate. Combine Parmesan cheese and bread crumbs on wax paper. Preheat oven to 450 degrees.
- Cut the eggplant lengthwise into 1/2 inch thick slices. dip each slice into the mayonnaise mixture turning to coat both sides then press both sides lightly into crumb mixture. Arrange each crumb coated slice in a single layer on the cookie sheet.
- Bake in a preheated 450 degrees for 5 minutes or more until coating is crisp and eggplant is tender.
