Ingredients
  • 75g -3oz butter, softened
  • 75g - 3oz caster sugar
  • 75g - 3 oz soft light brown sugar
  • 1 egg, beaten
  • 1tsp vanilla essence
  • 175g - 6oz plain flour
  • ½ tsp baking powder
  • 50g – 2 oz dried cherries, chopped (soak cherries in a little orange juice for 1hr to soften)
  • 100g - 4oz plain chocolate drops/chips

Directions
  1. heat oven to 180C, 350F or gas mark 4
  2. beat butter and sugars till smooth
  3. add vanilla to beaten egg
  4. add egg slowly to sugar mix, beating well
  5. sift flour and baking powder to sugar, beating well
  6. chop cherries, add to mix with half the chocolate, stir well
  7. with a teaspoon drop mix onto greased baking trays
  8. flatten with back of fork and sprinkle with remaining chocolate chips
  9. bake for 10 min or until golden brown
  10. leave on trays for a few min then lift off with spatula onto wire wrack to cool
