How to make it

  • Prepare pasta according to package direction; drain.
  • Heat 1/4 cup broth in a deep non stick skillet over medium heat. Add garlic and rosemary and cook 15 seconds. Add chicken and cook, tossing well, until lightly browned, about 3 minutes.
  • Add asparagus*, remaining chicken broth, parsley and pasta to skillet. Increase heat to high and bring to a boil, stirring occasionally, until liquid has reduced enough to lightly cover pasta.
  • Sprinkle with reduced fat Parmesan, salt and pepper and toss. Serve immediately.

    Really nice sounding recipe and as my husband's a big baby re. asparagus I can see switching in green beans or other veggie he'll eat. I'll make this soon.

    Very good! Nice change from the heavy sauced pasta dishes I normally make! It was light and refreshing. I did have to do more stock though cause when I cooked it down there was hardly anything left. Next time I'll do even more cause the noodle sucked up the sauce quick. I did add some bell peppers and eggplant I needed to get rid of. Will make again! Thanks!
