How to make it

  • Season fish with black pepper and wrap fillets tightly in prosciutto.
  • Heat a large lidded non-stick frypan.
  • Add half of the oil and pan-fry the fish, turning it occasionally, until golden brown and half cooked through.
  • Remove to a warm plate and set aside while you make the sauce.
  • Heat the remaining oil in the same pan and cook the onions until they start turning translucent.
  • Add garlic and chilli and cook until fragrant.
  • Add wine and bring to a boil; simmer until nearly all evaporated.
  • Add beans and tomatoes and simmer until slightly thickened.
  • Return fish to pan, cover and cook until fish is just cooked through.
  • Sprinkle with parsley and season to taste.
  • Serve immediately with crusty bread.
