Awesome Aussie Cod Wrapped In Prosciutto With Tomato N Butter Bean Sauce

- 4 large whitefish fillets, (blue-eye, snapper or kingfish) shopping list
- Freshly ground black pepper shopping list
- 4 slices prosciutto shopping list
- 2 tbs olive oil shopping list
- 1 medium brown onion, chopped finely shopping list
- 1 clove garlic, sliced thinly lengthways shopping list
- 1 small red chilli, sliced thinly shopping list
- 1/4 cup white wine shopping list
- 1/2 lb butter beans, cut into 2" lengths shopping list
- 4 vine-ripened or salad tomatoes, peeled and diced shopping list
- 1/4 cup coarsely chopped fresh parsley shopping list
- sea salt and freshly ground black pepper, to taste shopping list

How to make it
- Season fish with black pepper and wrap fillets tightly in prosciutto.
- Heat a large lidded non-stick frypan.
- Add half of the oil and pan-fry the fish, turning it occasionally, until golden brown and half cooked through.
- Remove to a warm plate and set aside while you make the sauce.
- Heat the remaining oil in the same pan and cook the onions until they start turning translucent.
- Add garlic and chilli and cook until fragrant.
- Add wine and bring to a boil; simmer until nearly all evaporated.
- Add beans and tomatoes and simmer until slightly thickened.
- Return fish to pan, cover and cook until fish is just cooked through.
- Sprinkle with parsley and season to taste.
- Serve immediately with crusty bread.
