Ingredients
  • 100 gr pine nuts
  • 200 gr flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon thyme seeds
  • 2 teaspoons Parmesan (Parmigiano Reggiano)
  • 100 gr green olives
  • 3 eggs

Directions
  1. Toast pine nuts in the oven for about 7 minutes at 180°C.
  2. Mix together flour, baking powder and salt. Add pepper, thyme seeds, Parmesan, olives and finally eggs. Work all together. Divide your dough in four parts. Create four logs (about 2.5x30 cm) on a parchment paper lined cookie sheet. Cook at 180° for about 25 minutes. Take logs out of the oven, cut them diagonal in slice of 1 cm. Cook again for 15 minutes.
  3. Putting them in tincan box, you can eat Cantucci even after a month

Cantucci are even very easy to do.
