Spice Cake

- 1 cup raisins shopping list
- 1 cup boiling water shopping list
- 1/2 cup butter, softened shopping list
- 1/4 cup shortening shopping list
- 1-1/4 cups sugar shopping list
- 2 eggs shopping list
- 1 cup chunky applesauce shopping list
- 1 teaspoon vanilla extract shopping list
- 2-1/2 cups all-purpose flour shopping list
- 2 teaspoons ground cinnamon shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon ground ginger shopping list
- 1/2 cup chopped walnuts shopping list
How to make it
- Place raisins in a small bowl; cover with boiling water. Let stand for 5 minutes; drain and set aside.
- In a large mixing bowl, cream the butter, shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine the flour, cinnamon, baking powder, salt, nutmeg, baking soda and ginger; add to creamed mixture just until blended. Stir in walnuts and raisins.
- Pour into a greased 11-in. x 7-in. baking dish. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
