How to make it

  • Wash beans. Cover with the water. Bring to a boil. Simmer,covered, for 2 min. Remove from heat. Let stand I hr.
  • Fry bacon. Reserve half for the garnish. In 2 Tbsp. of the bacon fat,
  • saute onion, celery and garlic. Add vegetables to soaking beans. Season with cumin.
  • Cover and simmer for 2 hrs. or until beans are tender. (Make sure
  • beans are always covered with water.)
  • Puree beans in a food mill or processor. Thin with the broth until
  • consistency is to your liking. Heat until steamy. Stir in salt and vinegar.
  • Serve in bowls. Garnish with reserved bacon pieces, chopped
  • eggs, parsley and lemon slices.
  • Sprinkle with black pepper

    Nothing beats bean soup on a cold winter day. This recipe sounds very tasty and easy to adapt to be vegetarian using fake bacon and toasted sesame oil to replace the bacon fat. Thanks!

    Your chopped egg garnish is a new twist on black bean soup to me. It's such a hearty soup that I can see making it a meal. I'd make this so thick my spoon would stand up and be really content.
