Grilled Chicken and Chorizo Skewers

- 1 pound chicken tenderloins, cut into 1-inch pieces (or use boneless, skinless breast) shopping list
- 1 pound chorizo sausage, sliced and cut into "half moons" shopping list
- 1 large red bell pepper, cut into 1-inch pieces shopping list
- 1 large yellow bell pepper, cut into 1-inch pieces shopping list
- 1 large spanish onion, cut into 1-inch pieces shopping list
- bamboo skewers (soaked in cold water ahead of time) shopping list
- salt to taste shopping list
- black pepper to taste shopping list
- olive oil to brush before grilling shopping list
- cumin Aïoli (recipe follows) shopping list
- Chopped parsley to garnish shopping list

- cumin Aïoli: shopping list
- 1 cup mayonnaise shopping list
- 2 teaspoons Dijon mustard shopping list
- 1/2 teaspoon finely minced fresh garlic shopping list
- 1 to 2 tablespoons ground cumin powder (or to your own preference of taste) shopping list
How to make it
- Assemble the skewers alternating ingredients
- Season with salt and pepper and brush with olive oil.
- Grill until chicken is cooked, 12 to 15 minutes
- Serve with cumin aïoli.
- Sprinkle parsley to garnish.

- For Cumin Aïoli:
- 1. Mix all together. Chill at least 1/2 hour to let flavors develop.
