Country Ham In Apple Cider Recipe
This is a delicious country ham with out the salty taste. This ham is a favorite of my family and even for those who thought they did not like country ham

Ingredients
  • 1 12 to 14 pound uncooked country ham
  • 2 quarts apple cider
  • 1 tablespoon whole cloves
  • 1/2 cup firmly packed brown sugar
  • 2 tablespoon prepared mustard

Directions
  1. Place ham in large container ( I use my laundry sink)
  2. Cover with water and soak 24 hours.
  3. Pour off water.
  4. Scrub ham in warm water with a stiff brush and rinse well.
  5. Place ham skin side down in a large roasting pan.
  6. Pour cider over ham and sprinkle with cloves.
  7. Insert thermometer into ham making sure it does not touch fat or bone. Cover
  8. Bake at 325 degrees F for approximately 4 to 5 1/2 hours or until meat thermometer registers 160 degrees ( 20 to 30 minutes per pound)
  9. Carefully remove ham from pan juices: remove skin.
  10. Place ham fat side up on a cutting board. Make shallow cuts in fat in a diamond pattern.
  11. Return ham to pan fat side up .
  12. Combine brown sugar and mustard: spread on ham
  13. Bake 30 additional minutes.
