Autumn Pork Stew

- 2 tablespoons olive oil shopping list
- 1/2 pound pork cubed and diced shopping list
- 2 tablespoons flour shopping list
- 1 large garlic clove minced shopping list
- 1/2 cup chopped white onion shopping list
- 1 cup diced red bell pepper shopping list
- 1 cup diced mushrooms shopping list
- 3 tablespoons orange flavored liqueur shopping list
- 1 cup peeled and diced sweet potatoes shopping list
- 1 cup diced new potatoes shopping list
- 1/2 teaspoon orange rind grated shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1/2 cup chicken broth shopping list
How to make it
- Heat 1 tablespoon oil in nonstick skillet then dust pork with flour and brown 2 minutes per side.
- Remove meat to dish then add remaining oil, garlic, onion and pepper then sauté 5 minutes.
- Stir in mushrooms and sauté another 2 minutes.
- Add liqueur to skillet and scrape up browned bits in skillet.
- Add potatoes, orange peel, salt, pepper and broth then bring to boil and reduce heat to low.
- Return pork to skillet and simmer covered until potatoes are tender about 20 minutes.
