Winter Vegetable Hash

- 2-3/4 cups celery root diced shopping list
- 1-3/4 cup turnips diced shopping list
- 3-1/2 cups diced parsnips shopping list
- 2 medium carrots diced shopping list
- 1 cup potato diced shopping list
- 2 cloves garlic minced shopping list
- 1/2 cup chopped white onion shopping list
- 3 tablespoons olive oil shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon dried thyme shopping list
- 1 teaspoon chopped fresh rosemary shopping list
- 1/4 cup white wine vinegar shopping list
How to make it
- Peel celery root, turnip, parsnips, carrots and potatoes then cut into 1/4” cubes.
- Combine in a large bowl with garlic and onion then mix well.
- Preheat oven to 350.
- Heat olive oil in a large deep frying pan over medium high heat.
- Add diced vegetables and sauté 15 minutes turning occasionally with a spatula.
- Stir in salt, thyme and rosemary.
- Add vinegar and toss with vegetables turning rapidly with spatula until vinegar has evaporated.
- Place pan of vegetables in oven then roast 45 minutes.
