Avocado Almond Rice

- 2 tablespoons unsalted butter shopping list
- 1/2 cup minced onion shopping list
- 1 cup long grain white rice shopping list
- 2 cups hot water shopping list
- 1 bay leaf shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 medium red bell pepper roasted and peeled shopping list
- 1 large avocado shopping list
- 1-1/2 teaspoons fresh thyme leaves shopping list
- 2 tablespoons plus 2 teaspoons olive oil shopping list
- 1/3 cup chopped toasted almonds shopping list
How to make it
- In a heavy medium saucepan melt butter over low heat.
- Add onion and cook stirring for 7 minutes.
- Add rice and saute over medium heat stirring for 2 minutes.
- Add hot water and stir once.
- Add bay leaf, salt and pepper then bring to a boil.
- Cover and simmer rice over low heat without stirring for 20 minutes. Discard bay leaf.
- Dice bell pepper.
- A short time before serving peel, pit and dice avocado.
- Add thyme, red pepper, oil and avocado to rice and stir gently with a fork.
- Gently stir in about half the toasted almonds.
- Transfer to a serving dish and sprinkle with remaining almonds.

We have similar recipes with rice as we make it with peas or broad beans i made it once with greensoya beans and it turned delicious but we cook it with either meat or chicken stock.
