Ingredients
  • 1 box chocolate cake mix
  • 1 box instant chocolate pudding
  • 3/4 cups water
  • 4 eggs
  • 1/2 cup oil
  • 1-1/2 cups coconut
  • 1 cup sour cream
  • 1/2 tsp coconut extract
  • Preheat oven to 350 degrees. Grease and flour a 12 inch bundt pan.
  • In a large bowl blend all ingredients, except the coconut, at medium
  • speed for 3 minutes. Stir in the coconut, and mix in by hand.
  • Pour batter into prepared pan, and bake for 55-60 minutes or until
  • wooden pick inserted into cake comes out clean.
  • GLAZE:
  • 1 cup semi sweet chocolate chips
  • 1/4 cup milk or cream
  • 2 tbl. butter
  • 1 cup coconut
  • Microwave chocolate chips and milk or cream until melted, whisk in
  • the butter, add coconut. Spoon over warm cake.
