Chocolate Coconut Bundt Recipe

Ingredients
- 1 box chocolate cake mix
- 1 box instant chocolate pudding
- 3/4 cups water
- 4 eggs
- 1/2 cup oil
- 1-1/2 cups coconut
- 1 cup sour cream
- 1/2 tsp coconut extract
- Preheat oven to 350 degrees. Grease and flour a 12 inch bundt pan.
- In a large bowl blend all ingredients, except the coconut, at medium
- speed for 3 minutes. Stir in the coconut, and mix in by hand.
- Pour batter into prepared pan, and bake for 55-60 minutes or until
- wooden pick inserted into cake comes out clean.
- GLAZE:
- 1 cup semi sweet chocolate chips
- 1/4 cup milk or cream
- 2 tbl. butter
- 1 cup coconut
- Microwave chocolate chips and milk or cream until melted, whisk in
- the butter, add coconut. Spoon over warm cake.
