Poached Eggs In Hash Recipe
My mother gave me an old Farm Jourmal Cookbook with some of her favorite recipes in ii. this is one one that is easy to make for a quick brunch.

Ingredients
  • 1 Tbls. oil
  • 1/4 c. chopped onions
  • 2 (1lb) cans of cornned beef hash
  • 6 eggs
  • salt
  • pepper

Directions
  1. Heat shortening or oil in large skillet.
  2. Add onion, cook 2 min.
  3. Add hash, breaking it up with spoon.
  4. Cook over medium heat 6 min., stirring occasionally
  5. Reduce heat to low; oat hash level inot pan then make six deep hollows with spoon.
  6. Drop an egg into each hollow.
  7. Season with salt and pepper.
  8. Cover skillet and cook five minutes or until egg is set.
  9. Divide into six portions and remove with egg turner then place each portions on a plate.
