This was created while I was trying to come up with a way other than strawberry rhubarb pie to use rhubarb. It's very tasty.

Ingredients
  • 1 1/2 lbs golden delicious apples, 1/2 in dice, peeled
  • 3/4 lb rhubarb, 1/2-inch pieces
  • 3 tablespoons sugar
  • 2 teaspoons flour
  • 1/2 teaspoon vanilla
  • 3/4 cup flour (for topping)
  • 3/4 cup brown sugar
  • 1/2 cup oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 3/8 cup butter
  • 1/2 cup walnuts (optional)

Directions
  1. Pre-heat oven to 350.
  2. Combine fruits, sugar flour & vanilla in a bowl and toss to coat.
  3. turn into an 8 x 8 glass baking dish.
  4. Sprinkle topping mix over fruit.
  5. Bake about 45 minute.
  6. Cool 20 minutes.
