How to make it

  • In pan with large circumference over med-hi heat crumble and cook beef.
  • When meat is almost done add oil, butter and orzo. Stir to coat orzo.
  • Add onion, garlic and green pepper. Cook til orzo is lightly browned and veg. are tender.
  • Add seasonings, mix well.
  • Add beer and paste, mix well. Allow liquid to cook off completely before adding broth.
  • Gradually add broth couple ladles at a time, allowing liquid to cook off before adding more, stirring often (just like risotto).
  • When last of liquid is added mix in drained black beans and corn.
  • Serve when last of liquid is absorbed, and orzo is tender.
