Southwest Style Orzo-Risotto

- 1/2 lb. ground beef shopping list
- 2 Tbsp. veg. oil shopping list
- 2 Tbsp. butter shopping list
- 1 lb. orzo pasta (uncooked) shopping list
- 1 diced onion shopping list
- 2 cloves chopped garlic shopping list
- 1 diced green pepper shopping list
- 1/8 tsp. crushed red pepper flake shopping list
- 1 tsp. cumin shopping list
- 1 tsp. chili powder shopping list
- dash cayenne (or more if desired) shopping list
- salt & pepper shopping list
- 1 can or bottle beer (I recommend a light beer) shopping list
- 1 Tbsp. tomato paste shopping list
- 6 c. hot beef broth/stock shopping list
- 1 can (15 oz.) black beans, rinsed & drained shopping list
- 1 can (15.25 oz.) corn, drained shopping list
How to make it
- In pan with large circumference over med-hi heat crumble and cook beef.
- When meat is almost done add oil, butter and orzo. Stir to coat orzo.
- Add onion, garlic and green pepper. Cook til orzo is lightly browned and veg. are tender.
- Add seasonings, mix well.
- Add beer and paste, mix well. Allow liquid to cook off completely before adding broth.
- Gradually add broth couple ladles at a time, allowing liquid to cook off before adding more, stirring often (just like risotto).
- When last of liquid is added mix in drained black beans and corn.
- Serve when last of liquid is absorbed, and orzo is tender.
