Alaskan Spot Prawns With Cannelloni Beans Recipe
This is a recipe that I got from my brother-in-law who got it from a co-worker. This was a huge hit when he served it at my nephew's graduation party. Enjoy

Ingredients
  • 1 cup dried cannelloni beans
  • 1 carrot
  • 1 celery rib
  • 1 onion cut in half
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves chopped
  • 2 teaspoons freshly chopped rosemary
  • 12 Alaskan spot prawns
  • 5 roma tomatoes peeled and diced
  • 1 tablespoon freshly chopped parsley
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Cover beans with water and soak overnight then drain well.
  2. In a large saucepan combine soaked beans, carrot, celery and onion with enough water to cover.
  3. Cover and simmer until tender about 1 hour.
  4. In a large sauté pan heat olive oil then sauté garlic, rosemary and prawns.
  5. When almost finished stir in tomatoes, parsley, salt, pepper and beans.
  6. Cook until prawns just turn pink then serve immediately.
