Alaskan Spot Prawns with Cannelloni Beans

- 1 cup dried cannelloni beans shopping list
- 1 carrot shopping list
- 1 celery rib shopping list
- 1 onion cut in half shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 3 garlic cloves chopped shopping list
- 2 teaspoons freshly chopped rosemary shopping list
- 12 Alaskan spot prawns shopping list
- 5 roma tomatoes peeled and diced shopping list
- 1 tablespoon freshly chopped parsley shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Cover beans with water and soak overnight then drain well.
- In a large saucepan combine soaked beans, carrot, celery and onion with enough water to cover.
- Cover and simmer until tender about 1 hour.
- In a large sauté pan heat olive oil then sauté garlic, rosemary and prawns.
- When almost finished stir in tomatoes, parsley, salt, pepper and beans.
- Cook until prawns just turn pink then serve immediately.
