How to make it

  • Toss frozen corn into large mixing bowl
  • Pour cans of tomatoes over the corn
  • Pour drained and rinsed black beans in bowl
  • Toss in the diced onion
  • And the cilantro
  • And the lemon juice
  • And the seasonings and mix
  • Adjust the seasonings to your taste, it's what makes the recipe great. Things I've incorporated before to alter the orginal recipe: added fresh minced serranos, canned chipotles, jalapenos, chopped mangoes, basil, scallions, garlic, fresh tomatoes, black olives, green olives. Don't be afraid!!! The fun part is you get to keep tasting it to check what you need more of. :)

    I also can't eat jarred salsa when I started making it homemade. This recipe sounds so good.

    Update: This turned out very good, I thoroughly enjoyed it. My roommate ended up ruining dinner by scarfing this salsa down an hour before dinner was ready.
