Adaptation Salsa

- 2 cans black beans, drained and rinsed shopping list
- 2 cans of mexican tomatoes with chilies (can use regular and add serrano or jalapeno or chipotle) shopping list
- 1/2 bag of frozen sweet kernal corn shopping list
- 1/2 cup lemon juice shopping list
- 1 medium red onion diced shopping list
- Good bunch of cilantro, leaves plucked from stems shopping list
- 1 Tsbp cumin shopping list
- 2 Tbsp chili powder (regular, chipotle - whatever you're feeling) shopping list
- 1-2 Tbsp garlic salt shopping list
How to make it
- Toss frozen corn into large mixing bowl
- Pour cans of tomatoes over the corn
- Pour drained and rinsed black beans in bowl
- Toss in the diced onion
- And the cilantro
- And the lemon juice
- And the seasonings and mix
- Adjust the seasonings to your taste, it's what makes the recipe great. Things I've incorporated before to alter the orginal recipe: added fresh minced serranos, canned chipotles, jalapenos, chopped mangoes, basil, scallions, garlic, fresh tomatoes, black olives, green olives. Don't be afraid!!! The fun part is you get to keep tasting it to check what you need more of. :)
