Strawberry Meringue Cake Recipe

Ingredients
  • 21/2 cups cake flour
  • 1 cup sugar
  • 1 tblsp baking powder
  • 1 tsp salt
  • 1/2 cup of oil
  • 5 unbeaten egg yolks
  • 3/4 cups cold water
  • 2 tsp vanilla
  • 2 tsp lemon rind
  • 8 egg whites
  • 1/2 tsp cream of tartar
  • 1/2 cup sugar
  • Meringue:
  • 4 egg whites
  • 1/3 t. salt
  • 1 t. cream of tartat
  • 1 cup sugar
  • Sweetened strawberries

Directions
  1. Sift together the cake flour, 1 cup sugar, baking powder, and salt.
  2. Make well in dry ingredients and add oil, egg yolks, water, vanilla and lemon rind. Beat with spoon til smooth.
  3. Combine egg whites and cream of tartar.(add cream of tartar slowly) in large mixing bowl.
  4. Whip til foamy.
  5. Add 1/2 half cup of sugar one tablespoon at a time.; beat til mixture forms stiff peaks.
  6. Gradually fold in egg yolks mixture into whipped whites just until blended.
  7. Line 2 8" sq. pans with waxed paper.
  8. Pour batter into pans.
  9. Bake in Moderate oven (350) for 45 minutes.
  10. Remove from oven and cool then place on baking sheets.
  11. Make meringue by beating together the egg whites, salts, and cream of tartar until foamy.
  12. Add sugar 1 T at a time
  13. Continue beating until meringue forms stiff peaks.
  14. Spread over cake.
  15. Place back in oven 4-41/2 minutes.(425) oven.
  16. Cool
  17. Cut into squares and spoon strawberries over top.
