How to make it

  • Sift together the cake flour, 1 cup sugar, baking powder, and salt.
  • Make well in dry ingredients and add oil, egg yolks, water, vanilla and lemon rind. Beat with spoon til smooth.
  • Combine egg whites and cream of tartar.(add cream of tartar slowly) in large mixing bowl.
  • Whip til foamy.
  • Add 1/2 half cup of sugar one tablespoon at a time.; beat til mixture forms stiff peaks.
  • Gradually fold in egg yolks mixture into whipped whites just until blended.
  • Line 2 8" sq. pans with waxed paper.
  • Pour batter into pans.
  • Bake in Moderate oven (350) for 45 minutes.
  • Remove from oven and cool then place on baking sheets.
  • Make meringue by beating together the egg whites, salts, and cream of tartar until foamy.
  • Add sugar 1 T at a time
  • Continue beating until meringue forms stiff peaks.
  • Spread over cake.
  • Place back in oven 4-41/2 minutes.(425) oven.
  • Cool
  • Cut into squares and spoon strawberries over top.
