Strawberry Meringue Cake

- 21/2 cups cake flour shopping list
- 1 cup sugar shopping list
- 1 tblsp baking powder shopping list
- 1 tsp salt shopping list
- 1/2 cup of oil shopping list
- 5 unbeaten egg yolks shopping list
- 3/4 cups cold water shopping list
- 2 tsp vanilla shopping list
- 2 tsp lemon rind shopping list
- 8 egg whites shopping list
- 1/2 tsp cream of tartar shopping list
- 1/2 cup sugar shopping list
- Meringue: shopping list
- 4 egg whites shopping list
- 1/3 t. salt shopping list
- 1 t. cream of tartat shopping list
- 1 cup sugar shopping list
- Sweetened strawberries shopping list
How to make it
- Sift together the cake flour, 1 cup sugar, baking powder, and salt.
- Make well in dry ingredients and add oil, egg yolks, water, vanilla and lemon rind. Beat with spoon til smooth.
- Combine egg whites and cream of tartar.(add cream of tartar slowly) in large mixing bowl.
- Whip til foamy.
- Add 1/2 half cup of sugar one tablespoon at a time.; beat til mixture forms stiff peaks.
- Gradually fold in egg yolks mixture into whipped whites just until blended.
- Line 2 8" sq. pans with waxed paper.
- Pour batter into pans.
- Bake in Moderate oven (350) for 45 minutes.
- Remove from oven and cool then place on baking sheets.
- Make meringue by beating together the egg whites, salts, and cream of tartar until foamy.
- Add sugar 1 T at a time
- Continue beating until meringue forms stiff peaks.
- Spread over cake.
- Place back in oven 4-41/2 minutes.(425) oven.
- Cool
- Cut into squares and spoon strawberries over top.
