How to make it

  • Sauté onion in butter. Set aside.
  • Cook melted butter and flour using a whisk over medium heat for 3- minutes.
  • Stir constantly and add the half & half.
  • Add the chicken stock.
  • Simmer for 20 minutes.
  • Add the broccoli, carrots and onions.
  • Cook over low heat 20-25 minutes.
  • Add salt and pepper. Can be puréed in a blender but I don't.
  • Return to heat and add cheese.
  • Stir in nutmeg.

    Incredible soup!!! Following this recipe to a "T" it was super simple to make and for under $20 it will become a future staple to my meal plan. I forgot to get the carrots so I took a chance and sauted a teaspoon of minced garlic with the onion for a little something extra... I used sourdough soup bowls heated at 350 for 15 minutes after coring them. I removed them briefly to add the soup and another thick pinch of cheddar cheese to the top before placing them back in the oven for a few minutes to melt the cheese. Luckly it worked out and my guests had nothing but rave reviews. Thank You Carterl!!! - Steve
