Wok Fried Dungeness Crab With Ginger And Lemongrass Recipe
This recipe comes from my cousin Barry who got this recipe from a professional chef that he helps out with his catering. He also makes this with shrimp and lobster, but this is the one I prefer. Enjoy

Ingredients
  • 3 tablespoons peanut oil
  • 1 stalk lemon grass peeled and minced
  • 1 piece ginger root minced
  • 2 teaspoons minced poblano chili
  • 1 clove garlic minced
  • 1 shallot minced
  • 1 cup chicken broth
  • 5 teaspoons rice wine vinegar
  • 5 teaspoons soy sauce
  • 2-1/2 teaspoons granulated sugar
  • 2 teaspoons chili paste with garlic
  • 1 teaspoon chopped Chinese fermented black beans
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
  • 1-1/2 pound Dungeness crab cooked cleaned and cracked
  • 1/4 cup sake
  • 2 lime wedges
  • Steamed rice

Directions
  1. Heat 1 tablespoon of the peanut oil in small saucepan over medium high heat.
  2. Add lemon grass, ginger, chili, garlic and shallot then cook until soft about 2 minutes.
  3. Add broth, vinegar, soy sauce, sugar, chili paste and black beans then simmer 5 minutes.
  4. Mix water and cornstarch in small cup then stir into broth mixture and simmer 2 minutes.
  5. Heat remaining 2 tablespoons oil in wok over high heat until almost smoking.
  6. Toss in crab and sake then cover and cook 3 minutes.
  7. Pour in lemon grass sauce then simmer until crab and sauce are heated through about 1 minute.
  8. Place crab on serving platter then pour sauce over and around crab.
  9. Serve with lime wedges and steamed rice.

This is very similar to the crab served in restaurants out here in China! Thanks this will be great for me to do at home so I don't have to go out and get it.
