Ingredients
  • 1 whole 7" pita
  • 2-3 oz chicken, cubed
  • 1/4 cup long carrot peels
  • 1/4 cup thinly shredded red cabbage
  • 1/4 cup torn spinach leaves
  • 1/4 shredded mozzarella cheese
  • Chopped cilantro
  • Chopped peanuts (optional garnish)
  • Sauce:
  • 2 tsp seasoned rice vinegar
  • 1.5 tsp low-sodium soy sauce
  • 1.5 tsp sriracha sauce
  • 1.5 tsp honey
  • 1 tsp wok oil
  • .5 tsp fresh minced ginger
  • Splash of sesame oil

Directions
  1. Preheat oven to 400.
  2. In a small bowl, whisk together sauce ingredients.
  3. Take pita and brush a small amount of sauce over it, leaving a bare edge about 1 cm wide around the edge. Top with an even layer of torn spinach.
  4. Toss chicken and cabbage in sauce and spread evenly over pita.
  5. Sprinkle with mozzerella. I probably used less than 1/4 cup...I just used it to sort of hold the toppings together.
  6. Toss carrot peels in sauce and top pizza with them. Drizzle remaining sauce over pizza (shouldn't be much left).
  7. Bake pizza 5-7 minutes or until pita is crisp on the bottom and cheese has melted.
  8. Garnish with lot of fresh cilantro and chopped peanuts, if desired. Serve hot or room temp.

I really like the idea of spinach and cabbage on a pizza. My daughter and I made little individual pizzas last night on Flatouts (found in the bread section close to the pitas & tortillas)...makes a pretty good crust. Thanks and have a great day!
