How to make it

  • Preheat oven to 400.
  • In a small bowl, whisk together sauce ingredients.
  • Take pita and brush a small amount of sauce over it, leaving a bare edge about 1 cm wide around the edge. Top with an even layer of torn spinach.
  • Toss chicken and cabbage in sauce and spread evenly over pita.
  • Sprinkle with mozzerella. I probably used less than 1/4 cup...I just used it to sort of hold the toppings together.
  • Toss carrot peels in sauce and top pizza with them. Drizzle remaining sauce over pizza (shouldn't be much left).
  • Bake pizza 5-7 minutes or until pita is crisp on the bottom and cheese has melted.
  • Garnish with lot of fresh cilantro and chopped peanuts, if desired. Serve hot or room temp.

    I really like the idea of spinach and cabbage on a pizza. My daughter and I made little individual pizzas last night on Flatouts (found in the bread section close to the pitas & tortillas)...makes a pretty good crust. Thanks and have a great day!
