Ingredients
  • 2 cups chicken stock, homemade if at all possible
  • 3/4C frozen tortellini
  • 1 handful fresh spinach
  • 1 teaspoon Parmiggiano Reggiano, freshly grated
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice, amount a wedge worth
  • salt and pepper

Directions
  1. Heat the stock to a boil and cook the tortellini.
  2. Put a handful of spinach in a soup bowl. Ladle the soup over top and squeeze in lemon and stir.
  3. Grate cheese and zest on top, and add some freshly ground salt and pepper. Serve immediately.

I am assuming by the title that there are supposed to be tortellini in there somewhere?...

Sounds good... with our without the tortellini. I also like rainy days and soup.. We don't get many here. I have faked it with the sprinkler on window!
