How to make it

  • Heat the stock to a boil and cook the tortellini.
  • Put a handful of spinach in a soup bowl. Ladle the soup over top and squeeze in lemon and stir.
  • Grate cheese and zest on top, and add some freshly ground salt and pepper. Serve immediately.

    Sounds good... with our without the tortellini. I also like rainy days and soup.. We don't get many here. I have faked it with the sprinkler on window!
