Twice Baked Potatoes Recipe


TWICE BAKED POTATOES Recipe
My neighbor shared this recipe with me and it is definitely not for the faint of heart! It is so rich it should be kept in a bank vault!

Ingredients
  • 7 cups mashed potatoes (see note)
  • one 8 ounce package cream cheese, softened
  • one 8 ounce container sour cream
  • garlic powder, to taste
  • onion powder, to taste
  • 1/2 cup (1 stick) butter, melted

Directions
  1. Heat oven to 350 degrees. In a large mixing bowl, beat together potatoes, cream cheese, and sour cream. Add garlic powder and onion powder and mix well. Place mixture in a glass 13X9 baking dish (or baking dish of similar size). Drizzle melted butter over top. Bake, uncovered, 45-60 mins. Serve hot.
  2. Note: I was stunned when my neighbor served these for the first time and I found out she had made them with instant mashed potatoes. No one in our family likes instant mashed potatoes because of their funny artificial flavor, but these didn’t taste like instant at all! We prefer "real" potatoes, so that is what I use. Recipe is easily halved.

My husband HATES instant mashed, bc, but of course they didn't taste like instant - LOL - you can add 1/2 block butter, sour cream and cream cheese to spinach and it wouldn't taste like it either! LOL ;'0
