Cheesey Spinach Canapes Recipe
Love these spinach and cheese appetizers! Found online a few years ago. I have modified it somewhat, added the onion, red pepper, mushrooms, garlic and seasonings. Sometimes I add cream cheese, too!

Ingredients
  • 6 eggs, beaten
  • 3/4 c. soft butter
  • 1/2 c. Parmesan cheese
  • 1/2 c. Romano cheese, shredded
  • 2 c. Pepperidge Farm Herb Stuffing Mix
  • 3 T onion, chopped fine
  • 3 T chopped garlic
  • 3 T red pepper, chopped fine
  • 3 T chopped mushrooms
  • Seasoned salt
  • Garlic Pepper
  • 1 T Worcestershire
  • 2 (10 oz.) pkgs. frozen chopped spinach

Directions
  1. Thaw and drain spinach.
  2. Mix all of above ingredients together and let sit in refrigerator 2 hours.
  3. Roll into small bite-size balls.
  4. Bake at 350 degrees for 15 minutes on large greased cookie sheets.
  5. Serve warm as hors d'oeuvre.

I have this recipe...I make up a batch at the holidays and keep in the freezer for unexpected guests! Great recipe!
