Banana Cinnamon Waffles Recipe
BANANA CINNAMON WAFFLES I obtained this recipe from an estate sale when I purchased the family collection from the Sullivan Estate in Dallas, Texas in 1988.

Ingredients
  • 1-3/4 cup flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 egg whites whipped
  • 1-1/2 cups skim milk at room temperature
  • 2/3 cup banana mashed
  • 1/2 cup apple sauce at room temperature

Directions
  1. Prepare waffle iron with cooking spray and heat up.
  2. In a mixing bowl combine flour, baking powder, cinnamon and salt.
  3. In another mixing bowl combine egg whites, milk, banana and applesauce.
  4. Add dry ingredients to wet ingredients just until moistened.
  5. Pour enough batter to fill 2/3 of the waffle iron then cook until crisp and golden brown.
  6. Set aside and repeat with remaining batter.

So many delicious sounding banana recipes! I love bananas, banana cake, banana bread, you name it but my husband only likes bananas and won't eat anything with bananas cooked into it. But I've got to try some of these great banana recipes soon!
