1950s Filled Oatmeal cookies

- 2 1/2 cups flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp salt shopping list
- 1 cup brown sugar shopping list
- 1 cup white vegetable shortening shopping list
- 1/2 cup warm water shopping list
- 2 1/2 cup quick cooking oatmeal ( do not use old fashioned oats ) shopping list
- 1/2 cup favorite jam or jelly shopping list
How to make it
- Mix together dry ingredients except sugar
- Cobine brown sugar, shortening and warm water and mix well
- Add flour mixture and beat smooth
- Add oatmeal and mix well with spoon
- Roll out dough to 3/8 inch thick on a floured work surface.
- Cut out some with floured cookie cutter
- If possible use a donut cutter has it has a hole already to put in the jelly
- Cut out remainders without a hole
- PLace 1 tsp of jelly on flat cookie and place 2nd cookie with hole on top so jam or jelly peeks out
- Bake about 10 to 13 minutes in 350 F until cookies are pale golden and done
- Cool carefully on rack
