How to make it

  • Mix together dry ingredients except sugar
  • Cobine brown sugar, shortening and warm water and mix well
  • Add flour mixture and beat smooth
  • Add oatmeal and mix well with spoon
  • Roll out dough to 3/8 inch thick on a floured work surface.
  • Cut out some with floured cookie cutter
  • If possible use a donut cutter has it has a hole already to put in the jelly
  • Cut out remainders without a hole
  • PLace 1 tsp of jelly on flat cookie and place 2nd cookie with hole on top so jam or jelly peeks out
  • Bake about 10 to 13 minutes in 350 F until cookies are pale golden and done
  • Cool carefully on rack
