How to make it

  • Preheat oven to 350
  • Peel and slice the eggplants into 1/2" slices
  • mince garlic
  • slice onions thinly (If you like a lot of onion keep the slices on the thicker side so they don't melt too much)
  • chop or rip the fresh basil leaves
  • In a 9X13" pan pour enough olive oil to coat the bottom of the pan.
  • Arrange a single layer of eggplant
  • Arrange a single layer of onion slices over eggplant
  • Drizzle with olive oil, sprinkle half the garlic, and half the basil over the top.
  • Sprinkle with salt and pepper.
  • Continue layering, the last layer will be just eggplant drizzled with the olive oil.
  • Cover pan with foil and bake for 80 minutes at 350 degrees.
  • Remove foil and bake for another 10 minutes to brown the top
