Roasted Eggplant

- 2 eggplants shopping list
- 1 clove garlic shopping list
- 2 onions shopping list
- 1/4 cup basil leaves shopping list
- 1/2 cup or so olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 350
- Peel and slice the eggplants into 1/2" slices
- mince garlic
- slice onions thinly (If you like a lot of onion keep the slices on the thicker side so they don't melt too much)
- chop or rip the fresh basil leaves
- In a 9X13" pan pour enough olive oil to coat the bottom of the pan.
- Arrange a single layer of eggplant
- Arrange a single layer of onion slices over eggplant
- Drizzle with olive oil, sprinkle half the garlic, and half the basil over the top.
- Sprinkle with salt and pepper.
- Continue layering, the last layer will be just eggplant drizzled with the olive oil.
- Cover pan with foil and bake for 80 minutes at 350 degrees.
- Remove foil and bake for another 10 minutes to brown the top
