Ingredients

How to make it

  • Combine the chilled watermelon cubes, radishes, cucumbers and feta cheese.
  • Chill.
  • Whisk oil, lime juice and brown sugar, and a few grinds of black pepper.
  • Dress the watermelong mixture lightly.
  • Treat it gently as to not break up the watermelon cubes.
  • Sprinkle top with the slivered mint.
  • Dig in and enjoy.

    Well what do you know?? I was just searching for an unusual salad my sister could take to a "ladies afternoon out" and this wonderful salad came up. You said you had been eating a watermelon/radish salad with mint. I guess this must be it... ;-)~ I am printing this out to give to her. I think she and her girlfriends will love this... Thank NYM...

    An absolute triumph! I can hardly wait to try this one -- I'm going to hold off until the watermelons available locally are better -- right now they're kind of mushy and not very flavorful. I just LOVE the idea of the sharp radish and feta flavors playing off against the melon, mint, and honey! Wow.
