BLACK-EYED PEA SOUP

- 1 - pound ground beef shopping list
- 1 pound Polish sausage, cut into bite-sized pieces( browning the sausage before adding it to the pot adds more flavor) shopping list
- 1- cup finely chopped onions shopping list
- two- 15 ounce cans blackeyed peas with jalapenos shopping list
- 1-14 ounce can beef broth shopping list
- 1- 14 ounce can diced tomatoes or (fresh) shopping list
- 1- 10 ounce can mild diced tomatoes with green chiles ( like rotel) shopping list
- 1- 10 ounce can chopped green chiles shopping list
- 2-medium jalapenos chiles seeded and chopped shopping list
- 1/8 - teaspoon salt shopping list
- black pepper to taste shopping list
How to make it
- place a dutch oven or heavy pot over medium - high heat .
- add the ground beef and onions and cook until beefe is browned.stirring frequently........
- add the sausage, black-eyed peas, broth, diced tomatoes, and tomoatoes with chiles, green chiles, jalapenos and salt........ mix well
- bring the mixture to a boil, reduce the heat, cover tightly
- simmer for 45 minutes............
- serves 8....................
- ..
- note......... can make ahead and refrigerate over night to allow the flavors to blend .........then reheat
