Karelian Hot Pot

- 2 lbs. beef stew meat, cut into 1-1/2 inch cubes shopping list
- 1 lb. lamb stew meat, cut into 1-1/2 inch cubes shopping list
- 1 lb. boneless pork, cut into 1-1/2 inch cubes shopping list
- 5 large onions, thinly sliced shopping list
- 1 tsp whole allspice berries shopping list
- 2 tsp salt shopping list
- cooked buttered or mashed potatoes shopping list
How to make it
- Preheat oven to 275 degrees.
- In a deep, heavy, preferably cast-iron casserole that has a tight-fitting lid, layer beef, lamb and pork alternately with the onions, allspice and salt.
- Press a piece of parchment paper tightly down against the meat in the casserole, tucking the ends of the paper down around the edges.
- Cover and bake for at least 5 hours or until the meat is very tender.
- Remove the cover and paper, stir and serve over hot, cooked buttered or mashed potatoes.
