How to make it

  • Preheat oven to 275 degrees.
  • In a deep, heavy, preferably cast-iron casserole that has a tight-fitting lid, layer beef, lamb and pork alternately with the onions, allspice and salt.
  • Press a piece of parchment paper tightly down against the meat in the casserole, tucking the ends of the paper down around the edges.
  • Cover and bake for at least 5 hours or until the meat is very tender.
  • Remove the cover and paper, stir and serve over hot, cooked buttered or mashed potatoes.
