  • 2 lbs. beef stew meat, cut into 1-1/2 inch cubes
  • 1 lb. lamb stew meat, cut into 1-1/2 inch cubes
  • 1 lb. boneless pork, cut into 1-1/2 inch cubes
  • 5 large onions, thinly sliced
  • 1 tsp whole allspice berries
  • 2 tsp salt
  • cooked buttered or mashed potatoes

Directions
  1. Preheat oven to 275 degrees.
  2. In a deep, heavy, preferably cast-iron casserole that has a tight-fitting lid, layer beef, lamb and pork alternately with the onions, allspice and salt.
  3. Press a piece of parchment paper tightly down against the meat in the casserole, tucking the ends of the paper down around the edges.
  4. Cover and bake for at least 5 hours or until the meat is very tender.
  5. Remove the cover and paper, stir and serve over hot, cooked buttered or mashed potatoes.
