Facing five lbs. of itty bitty raw breaded chicken pieces, this is the dish that resulted. It was filling, tasty and economical.

Ingredients
  • 2 tbsp of cooking oil
  • 2 generous cups of breaded raw chicken pieces (if you get your food from Angel Food Ministries, you know what little bitty chicken pieces I'm talking about!!)
  • 1 bag of Oriental mix frozen veggies-broccoli, carrot, water chestnut blend-(3 bags for $4.00 at Aldi)
  • 1/2 head of shredded green cabbage
  • 2 slivered yellow onions
  • 4 garlic cloves minced
  • 1 tbsp of five spice powder
  • 1 tsp of ground ginger
  • 1 tbsp of soy sauce
  • 2 tsp of sugar
  • 1 tbsp of loose chicken base mixed in 1 cup of warm water
  • 1 tbsp of cornstarch mixed with 2 tbsp of sherry
  • 1 pinch of red pepper flakes
  • cooked white or brown rice

Directions
  1. Heat oil in large fry pan with sloping sides. (I used my wok)
  2. Add the breaded raw chicken and toss until all pieces are well browned.
  3. Shove to the edges of the pan and let the oil pool in the middle of the pan.
  4. Dump the onions on top of the hot oil.
  5. Dump the cabbage on top of the onions.
  6. Dump the frozen veggies on top of the cabbage.
  7. Top with garlic and all the dry seasonings.
  8. Wait two minutes or so and then toss like mad.
  9. Dump in the soy sauce, warm chicken base in water and cornstarch and sherry.
  10. Cover and cook another 6-8 minutes until the veggies are done to your liking.
  11. Serve over rice.

Thanks! I have been trying to figger out something to do w/ those that was at least semi-healthy. So far I have made some into buffalo seasoned bits and put on wrap sammiches. Have to try your way next!
