Hot Rice Salad

- 400g rice (2 c) shopping list
- 875 ml boiling water (3½ c) shopping list
- 2 chicken stock cubes shopping list
- 3 onions shopping list
- 1 clove garlic shopping list
- 1 medium green pepper shopping list
- 30 ml sunflower oil (2 T) shopping list
- 250 g mushrooms shopping list
- 250 g bacon shopping list
- 1 large tomato shopping list
- 5 ml salt (1 t) shopping list
- pinch of black pepper shopping list
How to make it
- Cook the rice in the boiling water to which the chicken stock cubes have been added, until it is soft but not mushy.
- Peel the onions and garlic and chop and cut into strips.
- Braise these vegetables in the sunflower oil until soft.
- Wipe the mushrooms with a damp cloth.
- Cut up the mushrooms and bacon.
- Peel the tomato and chop roughly.
- Add the mushrooms, bacon and tomato to the onion mixture and braise till just done.
- Season with the salt and black pepper.
- Mix the vegetable mixture and the rice lightly together with a large fork.
- Serve the rice salad hot.
