Black-Eyed Pea Dressing

Savory stuffing that's perfect for the holidays or any time of the year.
Ingredients
- 1 lb. hot ground sausage shopping list
- 1 med. onion, diced shopping list
- 1 pkg. (6 oz.) stuffing mix shopping list
- 1/2 cup all-purpose flour shopping list
- 1/2 tsp. baking soda shopping list
- 2 large eggs, lightly beaten shopping list
- 1 cup buttermilk shopping list
- 1/2 cup vegetable oil shopping list
- 2 cans (15.8 oz.) black-eyed peas, drained shopping list
- 2 cups shredded cheddar cheese shopping list
How to make it
- Cook sausage and onions in a large skillet over med.high heat until no longer pink, crumbling as it cooks
- In a food processor grind stuffing mix until they look like bread crumbs
- Mix stuffing, flour and baking soda
- In another bowl stir together eggs, buttermilk and oil until blended
- Add to dry ingredients and stir until completely mixed
- Add sausage & onion mix, peas and cheese
- Pour into a 13" x 9" baking pan that's been sprayed with non-stick spray
- Bake uncovered 1 hr.
